Eggs in a nest, eggs in a basket- either way these are a very fun meal! I think they look just like birds’ nests! I used butternut squash for my nests, which makes them a fun bright yellow-orange color and is a fantastic way to get vegetables and a good protein source (the eggs) into your morning meal!
Eggs In a Nest Recipe
Serves 3
1 pound butternut squash, grated
2 tablespoons organic butter, ghee, or coconut oil (Buy Butter or Coconut Oil here)
1/2 teaspoon salt (Buy Sea Salt here)
1/4 teaspoon freshly ground pepper
3 eggs
Equipment for Eggs in a Nest
A frying pan with a lid
Thin metal spatula to sauté the squash with and to use to remove the finished nests from the pan
Eggs in a Nest Instructions
In your frying pan melt your fat (butter, ghee, or coconut oil) over medium heat until melted.  Add the shredded squash and salt and sauté until cooked through and starting to brown, 10 minutes.
Form the squash into three nests, using your spatula to round out a hole for the egg in the middle.
Crack one egg into each nest, sprinkle with freshly ground pepper, and cover the frying pan with a lid.  Allow to cook until the yolk is set but the egg is still runny (or however you prefer), approximately 5 minutes.
Using a spatula, slide onto a plate and enjoy!

I loved these with butternut squash last winter and today I tried it with grated zucchini, grated carrot, and a few peas. It was very tasty and texturally interesting. I called it eggs in a garden. Thanks for the inspiration Cara!
