Coconut Flour Pancake Recipe


GAPS SCD low carb Coconut Flour Pancakes

Finally! I’ve been trying to find a good coconut flour pancake recipe for a long time!  One of the awesome things about using coconut flour is that you use so little of it and a LOT of eggs, so a normally carb-heavy meal is suddenly transformed to be full of protein, fiber, and healthy fats.  These grain free coconut pancakes stick with you better than pancakes made with grains, yet can be topped with the same yummy toppings!

Makes 12 silver dollar pancakes- these are dense, so this many with a side of meat easily fills our family of four

Coconut Flour Pancake Ingredients:

4 eggs
1/4 cup coconut flour (Buy Coconut Flour here)
1 pinch cinnamon, optional (Buy Organic Herbs and Spices here)
1 tablespoon honey
1/4 cup yogurt (Buy Yogurt here)
Ghee, butter, or coconut oil for frying (Buy Butter or Coconut Oil here)

Coconut Flour Pancake Directions:

Mix ingredients until smooth and let them sit for five minutes so the coconut flour can absorb the liquids. Put 1 teaspoon fat on griddle and melt over medium heat.  When griddle is hot, pour 1 tablespoon of batter on for each pancake.  Allow to cook until golden brown, 1-2 minutes on each side.   Repeat with the remaining batter, adding the teaspoon of fat each time or as needed to prevent sticking.

    We’ve made coconut pancakes for quite a while but my oldest isn’t such a fan. Does the yogurt change them quite a bit from the normal recipes out there?

    I’m not sure that the yogurt changes them much, but these I’m happy with because they don’t fall apart when fried for me. I can’t tell you how many times I’ve had them fall apart all over the pan!

    I think different coconut flour is different, too. I use Tropical Traditions so that’s what all my recipes are tested with.

    Good Morning…I am anxious to try these pancakes but we don’t do well with milk/yogurt. Any suggestions for substitutions on the yogurt?

    Can you direct me how to make them without yogurt ? or is there something I can substitute ? My son is on casein free diet as well.

      Hi Donna, you can use apple sauce, apple butter, or pumpkin butter instead. My kids are currently off of milk as well, so you’ll be seeing more dairy free recipes here in the near future!

    I was so excited about these but they were not good. My 3 year old, who we wonder if she has taste buds sometimes (because she eats/likes everything) said no thanks to these. I could not eat them. They were just too dry and took forever to chew – bland tasting. We are used to very nutritious food and have the pallet for interesting tastes. I used excellent ingredients. I hope the CHEESESLAVE recipe is better.

    Wonderful tasting! These beat the almond flour pancakes we were using hands down. It made a huge batch for us, tasted great, didn’t fall apart or burn. Perfect recipe for us. :)

    We don’t have time on busy weekday mornings so I’ve made Saturday lunch our pancake & sauteed apple meal and the boys just loved these. They gobbled up the whole recipe. I had hoped to save out a few to spread with nut butter & honey for their snack later but maybe next week… LOL.

    Can I add the honey later (after it’s cooked), because I don’t want to cook the honey and kill all the enzyme?

    I have a different recipe but very similar. I LOVE them. I used almond milk the other day because it was the only thing we had. They came out just like before.

    It worked! Two other recipes this week crumbled on me, so happy these didn’t! And my 6 yr old loves them. So happy to be getting some egg in her. She ate almost the whole batch between lunch and breakfast! THANKS a million times over!

    Hi Cara, I am brand new to your blog as well as to GAPS. We have been refined-sugar free for my 3 year old since October and grain and dairy free for about 2 weeks now. He is constantly asking for pancakes (as it was one of his FAVORITE breakfast foods) and this morning I suprised him with your recipe for Coconut Flour pancakes (I explained to him that it was HIS special pancakes that had no sugar in it) and he scarffed 4 of them down and wanted more (though I told him no). I am so thankful to have found your website and look forward to trying other recipes of yours!

    We’re starting GAPS this weekend, so I figured I’d give these a try before we go through the intro and can’t have anything like this for a while. I wasn’t crazy about the mealy coconut flour texture, but still thought they were pretty good, but my children wouldn’t eat them – which surprised me because they loved your coconut waffles and some other GAPS friendly pancake recipes we tried. I’m curious to see if they like them better after we have been on the diet for a while. Thanks for the recipe!

    I made these for breakfast this morning and they were really good! They didn’t quite turn out like your picture (possibly because I used homemade coconut flour), but they were tasty all the same. Even my husband (who is not on GAPS) enjoyed them (with some brown sugar and sour cream!). I don’t have a griddle and found cooking them one by one in my small frying pan a bit laborious, so by the time it got to making my own, I tried doing them in my waffle iron – worked perfectly! I had mine with butter, sour cream and a drizzle of raw honey. Thanks for sharing these great recipes.

    These freeze well… (I used rice milk instead of yogurt though and today I’m trying coconut milk). Put them on a wire rack or mesh screen to cool, put them in the freezer lying separately and still on the wire rack. When frozen, put them in a storage container and back into the freezer. When you are ready to eat them, take out the number you need and pop them in the toaster. Who needs eggos?

    Okay, I’m back! I made these again this morning after 3 months on the GAPS diet, and they were a huge hit. My children ate every last pancake and were begging for more. I’m so glad that I gave them a second chance. Thank you for the recipe!

    We have tried several of your recipes and they are great. These cooked beautifully without falling apart, but they were quite dry. I don’t know if it was the type of coconut flour we used or our homemade yogurt? I am thinking we will try them again adding applesauce or cooked butternut squash to add a bit of moisture. Thank you for your site and all you do for the GAPS community!

I am on Day 30 and am so happy to be able to eat the GAPS pancakes finally. I am looking forward to when I can eat the flours because these will be the first things I make:) Must get a waffle iron:) By the way, the links to buying the yogurt and other items does not work. Hopefully that’s an easy fix for you.

    Hi! I saw in the comments you said we could use coconut milk instead of regular milk? Is it same oroportion? Same for applesauce or apple butter instead of yogurt , but same amount? Thanks!

    Made these tonight and they were great! I didn’t have honey, so used Agave instead and I subbed the yogurt with a little heavy cream and they were perfect! Thanks for the recipe!

    Am I missing something, or are you all just making REALLY really small pancakes? One tablespoon of batter does not spread very much! Just wondering. I really enjoyed these, and so did my youngest!

    Tired these this morning and they were a hit. Reading through the comments makes me think that it probably matters what you’re comparing them to. If someone’s coming straight out of SAD and white flour mixes, I guess they wouldn’t like them as much. But for us, who have been doing GAPS/SCD and grain free for a long time, they were a delight.

    The cinnamon in the recipe (because it is such a small amount) didn’t add a lot of *flavor*, but the scent factor was amazing…my ten children kept wafting toward the kitchen following their noses…”What smells like *pancakes*??” They were a hit, slathered in butter and a small drizzle of honey.

    This was only my second coconut flour recipe ever – I just made coconut flour challah Friday for the first time. I was surprised at how fun, convenient (and almost naughty- is this legal?) it felt to just reach in a bag, pull out some flour and use it straight up without all the sprouting, drying, grinding and /or soaking.

    P.S. We found that 325 degrees was perfect for cooking these on the griddle.

    I made these this morning. I wanted to share how EASY this recipe is. Also, I used the leftover batter to make pancakes to use as sandwich bread. It was so easy to make and eat….no slicing from a big loaf that takes a long time to bake and crumbles. Next time I will omit the honey to use as sandwich ‘bread’ again. Thanks!
